What I Ate Wednesday is nothing new – other bloggers have been doing this for awhile now. I’d like to consider myself more of a healthy living blogger than a food blogger, but the food you see on the blog is mostly all the frozen custard I partake in. (I’m going on a week + a half of withdrawal right now. I think that needs to change, stat.) With 2 life changes last week (giving birth to a beautiful daughter + turning 27, which is just getting way too close to 30 for comfort), I figured this would be a great time for me to jump on board with What I Ate Wednesday. Plus, it’ll be fun to look back a year from now and see how my eating has changed/evolved over the year.
I usually eat oatmeal for breakfast, especially when I’m at home and have the time to cook some on the stove top. However, a newborn makes getting anything done much, much more difficult. So, I’m sticking with easy breakfasts like bagels, fruit, or cereal.
- 1 cup Honey Nut Cheerios
- 1/2 cup Kashi Go Lean Crunch
- 1/2 cup frozen blueberries
- 1/2 banana
- 3/4 cup vanilla soymilk

We have an abundance of easy to prepare food right now thanks to frozen meals + family members who have been happy to keep us well fed. We had ordered a pizza the night we got home from the hospital and it was calling my name for lunch today. Delicious veggie pizza made the perfect easy-to-prepare lunch.
(And a piece of Dove Dark Promises that went unphotographed. Gotta satisfy my sweet tooth!)
MacKenna had a great day today! She luckily let me make a smoothie this afternoon while she happily watched from the Boppy lounger. She didn’t even make a sound when the blender was on! Good baby!
- ~1 cup frozen peaches
- 1 frozen banana
- 1/2 cup coconut water
- 1/2 cup vanilla soymilk
Served in my Tervis Tumbler that I received as part of the Foodbuzz Tastemaker Program. The cup was absolutely perfect for my smoothie! Now, I just need some longer spoons so my hands don’t get all sticky.
Matt’s still finishing up the cross country season, so he doesn’t get home until about 5:30 and after a long day, he really doesn’t want to be making dinner. What’s the easiest dinner I can make with a baby (who of course decided to take a nap today when I could have cooked a real dinner)?
- 2 cans diced tomatoes with garlic + onions
- 1 can kidney beans, drained + rinsed
- 1 can pinto beans, drained + rinsed
- 1 can Mexican spiced chili beans, drained + rinsed
- 2 cups vegetable broth
- 1 cup frozen corn
- 1 cup frozen mixed veggies (random addition)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- 1 tablespoon vegan Worcestershire
- 1 teaspoon minced garlic
- A few dashes of Bubba Gump’s hot sauce
Throw everything into the pot and bring to a boil. Turn heat down to low and simmer for about 30 minutes. Top with cheese and a big slice of homemade bread on the side and that’s what I call an easy dinner!
MacKenna slept through dinner so Matt + I got to enjoy our chili at the table together, which was lovely! It’s this little things…
We went over to my parents’ house on Sunday and left before eating dessert! So, my mom brought me over some pie so we could still indulge a bit.
Mmmm… apple pie is my absolute favorite! Hit the spot! And maybe a handful of candy corn made it to my mouth a little later. Just maybe though… ;)
